Apple and Pear Jam with Citrus

Jam made from the fruit of old-variety trees scattered around our farm, scented with the juice and zest of different citrus fruits and enriched with vanilla bean seeds. Pale straw-yellow colour, delicate flavour and aroma, very firm texture, ideal to accompany very well-aged hard cheeses or to spread on bread/rusks, and also for very fragrant biscuits and tarts.
