The Farm
Agricultural tradition and sustainable innovation in the heart of Tuscany
The Scorgiano Azienda Agraria estate lies at the foot of the Montagnola Senese, in an area that has been devoted to farming for centuries, between Casole d’Elsa and Monteriggioni. Founded in 1667, it has always belonged to the same family and is now run with passion by Lapo and Lapo’s mother, Claudia, who carry on an innovative tradition with particular care for sustainability and for the local area.
With more than 500 hectares of land, the farm is an example of certified organic farming since 2005. The crops, which include ancient grains such as the Senatore Cappelli variety, einkorn wheat and legumes, are grown in respect of natural cycles, without pesticides or chemicals. These lands are also home to our centuries-old olive trees, from which we obtain a top-quality organic extra virgin olive oil.
At the heart of the farm, the semi-free-range rearing of Cinta Senese and Grigio della Montagnola Senese pigs is a fundamental part of our work. Our pigs roam freely, feeding on grain and forage grown on the farm, and are turned into artisan cured meats. Every product is the result of a constant commitment to animal welfare and to the quality of the finished product.

Innovation and Sustainability
Our story: questions about
Scorgiano and the way we farm
Is Scorgiano a certified organic farm?
Yes, since 2005. Ancient grains, legumes and olive trees are grown in respect of natural cycles, without pesticides or synthetic chemicals.
Which pig breeds does Scorgiano raise?
Cinta Senese and Grigio della Montagnola Senese, raised semi-free-range. The pigs live outdoors among the woods and also feed on grain and forage grown on the farm. This is the rearing that our cured meats come from.
What is the difference between semi-free-range and intensive farming?
In semi-free-range farming the animals spend most of their lives outdoors, moving about and growing more slowly. This is why the meat is tastier and the fat softer and more fragrant. In intensive farming the animals are kept indoors and have short growth cycles.
Which ancient grains do you grow?
Among others, the Senatore Cappelli variety and einkorn wheat. The stone-ground semolina of Senatore Cappelli becomes Scorgiano pasta.
How do you reconcile tradition with sustainability?
The farm uses low-impact farming technology, such as the mill powered by solar panels. Every year it also increases nectar-rich crops, such as high-oleic sunflower, to support bees and biodiversity.
